The Cabernet Sauvignon grapes are crushed and barrel aged for 12 months. They mature at a leisurely pace while basking in the warm sun of the Judean Mountains and being gently caressed by the cool maritime breezes from Israel’s Mediterranean Coastal Plain. This ideal climate allows the fruit to reach its entire flavour potential offering full of ripe raspberry flavours, black cherries and hints of black pepper with a final note of aromatic spices. The wine has a rich, intense nose of blackberry, cassis, and plum fruit with subtle hints of vanilla, toast and caramel. The balance is structured yet elegant, with soft, silky tannins. The wine is drinking beautifully after each release, but you can expect this wine to develop for many years to come. It is best served with grilled meats and colourful ethnic dishes. Open and decant one hour prior to drinking.
